My employee fails to phone my company when he is too ill to come to work. What should I do?

I began to investigate and discovered that my employee had been marking the register to say that students were present. I did an investigation and found her to have committed fraud. My employee admitted to completing these registers and that the classes did not happen. I told the employee to attend a disciplinary hearing on grounds of gross misconduct. She then stated she wanted to resign on the grounds that she couldn’t face going to the disciplinary hearing as she was not emotionally prepared due to her health. I stated that if she did not resign with immediate effect I would have to continue with the disciplinary hearing. I then received an e-mail with my employee saying “Please accept this e-mail as resignation but I am reserving the right to take legal advice on the basis of my resignation.” I then received another e-mail the following week with a letter of resignation. What should I do now?
